Day 2 of The 100 Days Reset Challenge | Healthy Recipes & Mindful Living
Welcome to Day 2 of my 100 Days Reset Challenge! Here’s how my day unfolded as I focused on staying mindful, healthy, and productive:
✨ Morning Rituals
I began the day with a cup of water to rehydrate and reset my system. I followed it up with meditation to center myself. Today’s mantra was:
“I am fully present in this moment, embracing peace and clarity within.”
After meditation, I enjoyed a cup of coffee and jumped into my morning workout, feeling energized and ready to tackle the day.
✨ Breakfast & Recipes
To kickstart my morning:
• I had soaked chia seeds before breakfast.
• My breakfast included butter-toasted bread, a spinach omelette, fresh kiwis, and a soothing cup of hibiscus tea.
The recipes for this balanced and delicious breakfast are shared in the video!
✨ Self-Care & Reading
Post-breakfast, I took my daily multivitamin and dedicated time to reading The Mountain is You. It’s an inspiring read that’s all about self-sabotage and personal growth.
✨ Lunch & Recipes
Lunch was a hearty and nutritious fried rice with paneer and lots of vegetables. To complement it, I prepared a side salad with crisp lettuce, fresh cucumber, and crunchy carrots. Recipes are shared!
✨ Afternoon Vibes
I played my singing bowl for a few minutes to restore calmness and balance in the afternoon.
✨ Dinner & Recipes
Dinner was a comforting eggplant and chickpea curry. It was so flavorful and packed with nutrients! I’ve shared the full recipe so you can try it out too.
As I reflect on the day, I feel grateful for the small moments of peace and the nourishing meals that fuel this journey. Stay tuned for Day 3, and let’s keep growing together!

Every morning, on an empty stomach, I drink room temperature water that I keep overnight in a copper cup. Then, about 20 minutes before my breakfast, I have a teaspoon of apple cider vinegar mixed in warm water 😊
