How To Make Guo Kui Recipe (Chengdu Style) | 成都锅魁
Learn how to make guo kui with my easy recipe. I originally published my Chengdu guo kui recipe on my tashcakes.com in 2017, and then made a short sped-up recipe video in 2020 (link below). I decided to make a more in-depth, detailed guo kui recipe video after noticing viewers were missing the link to my written recipe in the video description (alas, TH-cam doesn't make the description field very conspicuous any more, especially on mobile).
I've been absolutely obsessed with guo kui ever since I first met my (now) husband in Chengdu years ago. The crisp, flaky, layered pastry together with the deliciously spiced meat and signature spicy-numbing Sichuan mala flavour is utter perfection. It's a must-eat every time I return to Sichuan to visit his family, and still my favourite Sichuan street food to this day.
I mostly see it written as '锅魁' out there, but sometimes also as '锅盔‘. The first is the one I most commonly see in Chengdu, while the second sometimes means a different kind of Chinese flatbread (but not always).

I reckon you can use box cake mix! I'd go with regular because angel food might be too light and the custard might sink right to the bottom with it

I found these on Etsy! The seller (Candycuttcant) doesn't seem to have them at the moment, but I've seen similar ones being sold on Amazon too
We usually just didn't called them "月光饼" instead we just say 月饼 and there's also has a weird romance stories about the moon. The story are called "嫦娥奔月" but I forgot that story I couldn't remember and is my dad used to told me when is bedtime stories. Also a other stories about "月兔” yea u can Google it. The ice moon cake is "冰皮月饼”

Haha I always try to avoid deep frying wherever I can because I'm always lowkey scared of getting splashed with hot oil 😂 But sometimes it's necessary for the most delicious Malaysian snacks (like pisang goreng 😍)

Hi Tash ! Do you know about a product called "Melt and Pour" which claims to not need tempering ? I ordered a kilo bag and it came today. I'm looking forward to using it 🙂
Hello! I can't seem to find the product, I Googled it but I can only find a soap making product 🥲 But it sounds like it might be a kind of compound chocolate like Candy Melts or Scotbloc, which aren't technically real chocolate - if you check the ingredients and it's made with vegetable fat instead of cocoa butter, it's the compound stuff (not necessarily a bad thing though, it's handy for decorating and candy making if not good for using as a baking ingredient)

Made these pancakes and it's really diffcult to cook because the inside was undercooked and outside was perfect. Is there any way to get around this

Ingredients??
I homemade it the first time and used the mixer. I put all the ingredients in it and just mixed it ( not overly mixed it ). It worked just fine with no extra mix bowl included. I also scrape extra flour on the side that it would mixed together. It’s a very fluffy pancakes.

I MADE THEM!! literally so good, I would recommend cooking them for a long time, even if it feels like a veryyyy long time because mine were really raw lol. Delicous though and super easy! Edit: I now have salmonella from not baking it properly, still would recommend though ;)

Lovely recipe! It might be helpful to place a cut out baking paper on the bottom of the bowl before pouring the batter in. Apparently sponge cake cooked in a rice cooker tastes quite good. I'll be trying out both recipes.
