I heard also that Rav Kook said it was important to eat meat on Shabbat to make the differentiation between man and animal, that there would come a time that people might think that an animal's life is more important than a human life. I think the Rambam also says that we'll all be vegetarian in the time of Mashiach. One vegetarian I know is waiting to eat meet at the Beit HaMikdash.
