You can make your own browning from sugar but it’s bottled and available for purchase here. Not sure if you can find it in stores where you are.

your balls look lovely... just wanted to add if people would like consistent size, a 1 ounce or 2 ounce scoop would be a nice tool. scoop the meat, push the handle, meat falls in your hand, roll and go.

Sorry but that is not goat water goat water is montserrat national dish and that is not the correct method all seasoning boil into the meat clove and thyme is that star ingredients 😢
I’m not from Monserrat ma’am. To each their own. You don’t have to cook a dish like someone else to call it what it is.
Represent the real Antiguan 🇦🇬 seasoned rice.... Proper
I grew up in Antigua and we did it differently. Did not use pumpkin or collard greens plus we cook the vegetables separately so that we can chop them up. Then we combine the meat and chopped vegetables and have them cook together as the last step. The presenters recipe seem to have some Jamaican influence.
I do believe that persons within the same country can have a different method of cooking a dish. There is no Jamaican influence, simply how my grandmother preferred to cook the dish. There is no collard greens (I’ve never even tasted that), it’s spinach. Everyone I know adds pumpkin.
