Do you need snapshots of a macOS VM running on Apple silicon?
This video shows how to take those snapshots. You can this method to roll a machine back to a pristine state (for testing an installer, for example.) Or to grab a snapshot of a particular machine state.
These snapshots are 60 gigs each, but if you use the manual VM creation process (see the first link below), you can shrink them to a much smaller size.
