Croissant Dough Lamination
I'm using |3|4|3| method of lamination or known as a "Double Single Folded", with 3 kg's of dough and 1 kg of butter sheet.

Pastry Butter or Dry butter is required especially if the kitchen temperature is.warm
I'm a professional continental chef.... I tried and failed 100 times doing croissants because of poor butter quality available in India then I realised croissants butter should be pliable should have plasticity texture mainly it has to be European butter or European style butter.... Until and unless you don't use it you don't get the actual product..... But actually European butter is like chewing gum i failed to find such a big chewing gum in the city so ended up using poor butter....
Have you tried making your own Euro style butter.? Saved me ALOT of money !
