Has to be dish you are raised with. I'm sure it's delicious but no way.
One more question, what about the cheek meat? Just leave it separate?
My neighbor used to slice the meat off the cheeks and eat it like sliced lamb.
Can you do the same with Goat head?

My dad, RIP from Bari, made this all the time, at least once a month... This dish actually a Peasants meal, during great depression this dish considered a Feast for Kings. Lambs Heads hard to get in my neck of the woods [Ozone Park] 'prior' Easter, Greeks in Astoria want whole lambs. Remember getting horse meat from Aqueduct Race Track, within walking distance, making the best Braciola. Still go to Aqueduct, home turf, gambling on horses, not eating them anymore. Got a hook at Western Beef, maybe lambs head over the weekend. Great Video Rick, enjoyed the watch.
Once when I was a kid my mom was making this & the heads were soaking in water in the sink, which had a slide-over cover. I came home from school & slid the cover over & was completely unprepared for this eye looking up at me & I just about had a stroke (I was 9, I think). That was my intro to capuzzelle & my family *never* let me forget it.
I make lamb tripe as well,my mother in law showed me how she makes hers.We stuff ours with rice and some spices.We also stuff intestines
