The recipe for 15 Pastel de nata:
Preheat the oven to 250 degrees C
- 175ml of water
- 200g of white sugar
- 4 Lemon peels
- 3 cinnamon sticks
- half a teaspoon of vanilla essence (this is optional)
Put all of the above ingredients in a pot and let them boil for 5 minutes
After the 5 minutes boiling, turn off heat and let it cool
In another pot, place:
-25g of plain flour
-17g of corn flour
Mix the two flours then pour in 250ml of milk - keep mixing until all lumps are gone then put turn the heat on medium low until the mixture becomes a think paste. Once the mixture is a think paste turn off the heat and place pot on a cool surface then slowly add the contents of the first pot all whilst mixing. Once this is all well mixed add 5 egg yolks and mix again.
Prepare your cupcake moulds by smearing butter in them.
Roll up your puff pastry and cut into pieces about 2cm big.
Take each piece of puff pastry and work it into the cupcake mould to form what looks like a cupcake shell as you can see in the video.
Fill up the cupcake moulds with the mixture 3/4 of the way up to allow room for growth.
Place in the preheated oven for 15 minutes
