PKP Coconut Curry
Here’s the Thai chicken coconut curry that I recorded this last year, been a busy chap so only just got round to uploading it.
The base sauce can be enjoyed just with veg or works equally well with King Prawns.
Ingredients
A good slug of olive oil or coconut oil if you prefer.
1 Onion sliced
1 Red pepper sliced
1 yellow/ Orange pepper sliced
1 courgette diced
2 hand fulls of spinach leaves
1 can of coconut Milk
2 Tablespoons of Red Thai curry paste
2 cloves of crushed Garlic (or 1 teaspoon of lazy Garlic)
2 Teaspoons of grated Ginger
1 Teaspoon of grated fresh lemon grass
1 Teaspoon of Honey
500g of skinless chicken breast

      Hi thanks for the question, being a Brit I use an Imperial pint which is roughly 568ml, but everything in cooking is rough measurements.

    just tried and it worked perfectly, had to add an extra 15 minutes to the pressure cook and 10 to the bake but it was a 1.8kg chunk.

    Hi if you can’t wait hours for the hotpot, I’ve found the same can be achieved by pressure cooking meat and carrots on hi for 15 mins, naturally vent for 10 mins add cornflour and sliced potato then PC for another 5 mins on hi, then add butter and air crisp for 25 mins - it’s so quick and delish!

    Had a ninja for years....never used it for pork as me trying to get crackling in the oven is a hit or miss affair. Yes, i dry and score the skin and salt it too! lol Really impressed how yours turned out. After the pressure cook i would have bet money the skin would be rubbery as it was wet. Time for me to do pork in the ninja now! Thanx.

    Hey TIny, tried your method for a 2.2kg boneless, pork leg joint in a Ninja 14 in 1 Foodie Max. Slight modifications in that I used a 500ml can of blood orange flavoured cider and increased pressure cook time to 30 mins. Temp. check was 44oC at that point. Roast time was increased to 45 mins and a temp. check was just over 60oC, so gave it another 5 mins. Took it out and probed at 65oC which increased to 73oC after 10 mins resting. Beautiful tender and moist meat and some of the best crackling I’ve ever done. Oh, and the juices made a fab gravy! Thanks Tiny - Thanks Ninja

    Why don’t you give the pressure cooker food temperature and the temperature of the pork once cooked? That would be useful.

      I didn’t give the temperature as on my thermometer it just has a picture of a pig, however According the UK Food Standards Agency pork needs to reach an internal temperature of 75 C for 2minutes, to kill off any harmful bugs. I also understand that US equivalent body advertise a completely different temperature which they have recently reduced, but I’ll stick with the UK authority.

      Thanks for your video mate. But I think what they are trying to say is we have no indication of how cooked it is before you bake/roasted. Do you you cook it 100% through and give it 30 mins on the B/R or 90% or 80% . Just giving it a go tonight and hopefully comes up good. I usually find I cook things abit longer then what I've watched aswell.

      Pressure cook for 1 hour and then optionally you can Air crisp for that roast flavour for up to 20 mins.

    Had to adjust my pressure times to 30 mins, and a bit longer in the roast/bake, then used the crisping lid, and wow, it's the best it's ever come out! 😍

      Hi Lennie, good question, I’ll be honest, my thermometer has a picture of a pig on it, so I’ve not looked at the temperature. Looking at my meat thermometer the pig has a line pointing at 85 Celsius.

    Just what I was looking for. My wife bought a large Brisket joint reduced to clear from nearly £11 to £2.50 in our local Morrisons late yesterday afternoon and we're going to have it for Sunday lunch later today. I know the conventional way to cook Brisket is slowly on a low heat but I thought a combination of pressure cooking and roasting in our Ninja Foodi would be worth trying. I hoped someone would have posted their method on TH-cam as I wasn't sure how long it would take and it looks like you've pretty much nailed it. 1 hour pressure and 20 -30 minutes to crisp it seems the way to go. I'll probably do the roast potatoes in the bottom at the same time as the meat during the crisping stage. Thanks for posting.

      @@tinysmallfryskitchen8610 We just finished eating it around half an hour go and it came out perfect! I don't know how big your joint was but ours was 1.75Kg and I thought 20 minutes crisping might not be enough. So I cooked it under pressure for an hour with two pints of water the same as you. After that, I drained most of the liquid, stirred the potatoes in the bottom to coat them and continued cooking it at 180C on the crisp setting, for 40 minutes, stirring the potatoes half way through. The meat and roast potatoes were all great. There's only two of us, so we sliced all the meat and we'll put the surplus in the freezer when it's cold. It should do us another two meals yet.     Why do you need to soak? Obviously to remove salt but if I was roasting I wouldn’t have to soak.

      Flintybad T That’s a good question, this one was straight from the pop booklet that came with the cooker. Looking at the table of programme settings there doesn’t appear to be much advertised difference between the modes. However this was to steam cook the fish rather than fry or poach, so it may be why.

    HI TSF, just got a 5 L PKP, but it doesn't seem to do the 'lid off and stew mode', only browning for 3 minutes and then you have to restart, which is a pain. Do you have to do anything special? Thanks for the video, excellent recipe.

      Hi John, that doesn’t sound right to me, according to the manual the stew functions default time is thirty minutes, try pressing the stew function button then hold down the + button to increase the timer, if that doesn’t work I would call the support line.

    That curry looked so nice I wouldn't use the chicken...but a vegetarian alternative or some nice breast not a veggie just fussy :)

    You will love your cooking in the king pro cooker iv had nine for 3 weeks and only use my oven once. Let me know how you get on and if your fish comes out
