The stage set is bigger than the brewtown and higher up for a better experience and Looked like a good place and crowd too.

Hey Mark, did you measure that 380 degree temperature on the oven floor? Or the coals/wood? I'm also curious how many blocks of wood you add at which times in this part of the process. I'm having troubles heating up my oven correctly. Hope you can help, thanks in advance
Yes that temp is the floor of the oven. I generally would light my oven and spend 3 hours getting it to temperature. It takes time to heat all of the structure up and then it will perform well, but you can't skimp on the time to get heat into the oven. Generally my best pizzas are cooked when its been going for 5 hours or so. Hope that helps
