If you're from Philly you know that ain't a cheesesteak. A cheesesteak is just steak, cheese and onion
I'm sorry man. I'm born and raised in South Philly. Your cheesesteak looks good and all, but if you're from Philly you know cheesesteaks don't have mushrooms and peppers And what's with putting all that steak seasoning on it bro it's a cheesesteak you just let the steak do its thing. You don't put any seasoning on it. You people aren't from Philly you're trying to reinvent something that doesn't need to be. It's either cheese and onions or just cheese. That's it man. Steak cheese and onions or just steak and cheese. That's a real cheesesteak. I don't know why mainstream got so into putting mushrooms And peppers and whatever you want to put in it. That's not a cheesesteak. A cheesesteak is just steak and cheese and onions if you want it... You guys are trying to reinvent something that's just plain and simple but amazing with just steak and cheese..
I would eat that all day. But, being born and raised in Philadelphia, that is an abomination of a cheesesteak.
Saying bold n beefy is the best seasoning is really saying something because the sweet n savory is awesome, so the next brisket I do on the Gateway will be with the B n B👍

I need to know the secret???? Tim can take the lid off the drum for what seems like forever... but I take the lid off for 1 second... and my temps are shooting up past 350... close to 400... what's the trick or pro tip... please
Definitely different than run of the mill sauces. It is sweeter but man it is good.
I think since the smashed was still done over a bit of smoke I'd definitely go smashed with the caramelized edges and crispy onions. ❤❤

Meat side up?? I don't wanna take that chance
We wrap meat side up to keep that bark nice and crispy. But it's really a personal preference thing if you go meat up or down.

If I had a drum smoker.I.Would do the same thing
Gateway Drums do make the cooking process easier and faster. But you can still get some great-tasting pulled pork from just about any pit!
how far from coals is grate?
It will vary depending on how much you fill your charcoal basket. But generally it'll be about 18 to 24 inches.
What temp was your smoker for these ribs?
Hot and fast at 300 degrees!
