Fischl's Demo was one of the very first ones, I think the very first one, and so they didn't already prepare for the international market and kept to the domestic, chinese one. Zongli isn't that overpowered, he's just the strongest shielder; but there are others, even 4*s, like Neolle (who hasn't got a demo), Diona (who's demo you missed), the Rock'n'Roll-girl, Beidou (also no demo), Toma, Leila, and some more I forgot. And you would probably not use him in the party when you fight against the clock. The smaller statues are of the Archons that rule the respective countries, the great ones in some capitals are used for religious service, and in the case of Inazuma, to store the confiscated visions (see Itto's demo). Liyue (China) has exorcists; Inizuma (Japan) has shinto priests, who also deal with spirits and ghosts. The game has Coop, but some missions have to be done solo. Adapti are illuminated beasts or cultivators, humans who have reached enlightment and immortality; it's a chinese thing and thus they appear only in Liyue. "She's kind of scary": sure, she's a Harbinger, so about the most scary thing you get to face in the game, besides ancient mad gods and Archons on a bad day.
