What is he (or she) chomping on?

Before all the deep tanks (Nemo34, Y40 and Dubai) the only deep training tanks were Navy training tanks. In the UK it was HMS Dolphin in Gosport (c.28m) - used for Submarine Escape training, and I believe also for specialist Navy Divers. I was part of the UK Freedive Team for the first International Team Freediving competition in 1998 in Sardinia and we trained in HMS Dolphin. Even if I was the same age as I was at HMS Dolphin I reckon I'd suffer with acute fear of heights!

I'm surprised that I was able to hold my breath for the whole video. Taking deep breaths beforehand to the point of getting a bit lightheaded so as to super oxygenate the blood works incredibly well.

Started getting difficult around 20 meters on the way up. I was just sitting holding my breath. I’m sure I wouldn’t have made it the whole way exerting energy like the river. BRAVO!! Edit: held my breath the whole dive. Just took 5 full and deep breaths before.
