    Nag subok ako ng simpleng version. Gumagawa kase ako minsan ng instant buro Kaya nag modify din ako sa Kimchi. Ang Ganda pala sa katawan Nyan at masarap kainin! Yung Ginamit Kong liquid sauce ay dalandan juice Na nilagyan ng chilli powder, sugar, salt, garlic, onion, ginger, paminta. Yung pechay baguio ay hinaluan ko ng carrots. Ang sarap nya may tamis asim at ang hang na may pahabol na lasang luya! Wow atcharang Kimchi! Fresh hindi fermented!

      Hi, kadalasan po nag aadd kami ng grated pear or apple sa kimchi para mabawasan ang anghang. Kapag po naanghangan parin kayo pwede nyo rin pong dagdagan ng asukal. Mag add po kayo ng 1-2 tbsp, ihalo sa kimchi, iset aside ng 1-2 hrs para po humalo yong asukal ng maigi. Tikman nyo po ulit kapag medyo maanghang pa din po, ulitin nyo lang po iyong nauna nyong process. Kapag naman po hindi nyo pa nahalo ang cabbage sa paste, mas maganda pong sa kimchi paste nyo ihalo ang asukal.

      Hi Jacqueline 😊😊, maari pong hindi narinse ng maayos ang cabbage kaya po naging maalat ang resulta. Nagkaron din po ako ng gantong kimchi noong mga una kung gawa. May 2 option po kayong pwedeng gawin para hindi masayang ang kimchi, una nag dagdag po ako ng bagong batch ng cabbage(hindi inasinan) at ng kimchi paste para po mabalance ang alat nong naunang gawa at humalo ito sa pangalawang gawa. Ang pangalawa po ay gamitin ito sa kimchi jjigae(kimchi stew), kimchi fried rice etc. Para naman po maiwasan ang gantong resulta sa susunod nyong gawa, after pong banlawan ang cabbage(matapos maibabad sa asin) maari nyo po itong tikman muna. Kapag maalat pa, banlawan po ulit hanggang makuha ang tamang alat. Happy Cooking 😊😊😊

      Hi Mariel, para po sa substitute ng gochugaru, pwede po any red pepper flakes/powder na meron kayo. Para po sa paste, combination po ito ng flour, sugar, water, ginger, onion, fish sauce and garlic 😊

      Hi, thanks for the comment. If di nyo pa po kakainin yong kimchi, let it ferment lang po. Eventually po mababawasan iyong ginger taste nya. Gano katagal nyo na po sya naferment?       Yes po. Pero depende pa rin po kung gusto nyong mas maasim(sour) ang smell and taste ng kimchi. Pwede nyo pong iferment(room temp) ng mas matagal.

      Kung gusto nyo po ng di gaanong kaasim, sakto na po ang 2-4 days. And yes po, if tatagalan nyo po sa 4 days ang fermentation, room temp pa din po, basta po di nasisikatan ng araw(no direct sunlight) and wala po masyadong hangin sa loob ng conatainer. Hindi din po sya mapapanis, pinakamatagal na ferment ko po is 3 months 😊😊😊. Thanks din po ☺️☺️

    How long is the fermentation before storing it in the fridge?

      Hi Glyza, we usually ferment it between 3 days to 2 weeks(this is applicable here in the Philippines because of the difference in humidity). But this still depends on acidity/sourness that you're looking for. The longer you ferment the sourer it becomes. Also its normal if there's bubbles in it, that's part of fermentation, just make sure that there's less air on the container and there's is no direct sunlight. Hope this helps. Happy cooking 😊😊

      Yong paste po is yong processed(using a blender or processor) onion, ginger, garlic and fish sauce. You can also add in apples for additional flavor. 😊😊

      Sa korean store po sure na may gochugaru(red pepper flakes) and sa iilang supermarkets meron din. Meron din po sa shoppe and sa fb marketplace 😊

      Hi, yes po since thickening agent(pangpalapot) din po ang corn starch. Pero may mag kaibang qualities po ang flour and cornstarch. Halimbawa po dahil matakaw sa tubig ang cornstarch maari pong mamuo ito agad, kapag ganto po ang nangyari mahihirapan po kayong ihalo ang paste(blinender na onion, garlic, ginger and fish sauce). Mas advisable po na gamitin ang all purpose flour or rice flour.

      Wala pong masyadong pagkakaiba kapag glutinous flour ang ginamit natin. Nasa pagluluto po ito ng paste(flour, water, sugar) nakasalalay, kapag po kasi hindi gaanong naluto ang paste medyo mas maglalasa po ang harina kapag all purpose flour ang gamit kaysa sa glutinous flour. Pero kapag okay po ang pagkakaluto, wala pong gaanong pagkakaiba. Ang flour po kasi sa recipe natin ay ginamit as thickening agent(pangpalapot) lamang po. Kaya hindi po sya gaanong nakakaapekto.
