You need dipping sauce to eat together with the food you cooked in hot pot. The dipping sauce is customizable but the popular one usually mix with sesame/peanut paste, garlic, soy sauce, sesame oil(the oil is to cool down the temperature of food right before you eat)

Stop this stereo typying about China CCTV, there are two western cities, London & NYC had more CCTV than any cities in China but non of you seem to point them out. Anothe issue its, the CCTV in China is doing its job, keeping all the people save, unlike in NYC or in London City there are killing daily, people are not safe, people are afraid to go out by themself at night.
Beijing has a population of more than 23 million + 9 million tourists per day, while Beijing has only about 51,000 police forces spread over 16,000 square kilometers, equivalent to 155 Paris. So a lot of what you see are security guards hired by companies... Enjoy your stay...😊

If you have to ask the question did the western media lie (about a self declared foreign adversary) , the answer is almost always yes.

China has many security guards in uniforms similar to the police, ensuring pedestrian safety. If you see green uniforms, they’re People’s Armed Police, focused on government security. China isn't as strict as it may seem; you happened to visit a central government area. In other areas, it’s more relaxed-even more so than Europe sometimes, like street drinking, which is fined here in the Netherlands.
Chang'an Avenue is heavily patrolled by police as it is home to many of China's central government institutions.The president's residence is located over there.
Are you sure you saw a lot of police or were some security guards? I saw a few travel vloggers point out "police" but they were actually just security guards. If you see the Chinese characters 警察 then they are the police. They would usually be wearing well fitting uniforms and have a more form look. Then there are what is called 城管 (Chengguan) who are "Urban Management and Law Enforcement". They're not really police but wear police like uniforms. They don't solve crimes or arrest people but they can give out fines for infringements. Next are the security guards 保安 who are just hired by companies etc and obviously aren't police.

As a Chinese, I really can't understand why the West is so interested in China's internal affairs.And he does not hesitate to use rumors to discredit everything in China.Whenever you see news about China, if they describe 10 sentences, 9 of them are false. For example, "social credit rating", you can ask any Chinese, we don't know what it is.There is a credit score on Alipay. You can rent shared bicycles, power banks, and get loans based on your credit score. But this is a private company, and its major shareholders are even foreign investors.The West twisted Alipay’s credit score into China’s “social credit rating” and forcibly tied it to the government. You know, I really think this world is interesting. So interesting.

It's a bit like it used be in Victoria station in London. They had official staff to help people with luggage but all the scammers hung around trying to get to the passengers before the official staff.
