Sure, here's a simple recipe for Kabli Pulao:
Ingredients:
- 2 cups basmati rice
- 1 lb lamb or chicken, cut into pieces
- 1 large onion, thinly sliced
- 2 carrots, julienned
- 1/2 cup raisins
- 1/2 cup chopped almonds
- 4 cloves garlic, minced
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon turmeric
- Salt to taste
- Vegetable oil for cooking
Instructions:
1. Rinse the rice thoroughly and soak it in water for about 30 minutes. Drain and set aside.
2. In a large pot, heat some oil over medium heat. Add the sliced onions and cook until golden brown and caramelized.
3. Remove half of the caramelized onions from the pot and set them aside for garnishing.
4. Add the lamb or chicken to the pot and cook until browned on all sides.
5. Add the minced garlic, ground cumin, ground coriander, turmeric, and salt. Stir well to coat the meat with the spices.
6. Add enough water to cover the meat, bring to a boil, then reduce the heat and let it simmer until the meat is tender.
7. In a separate pot, bring water to a boil and cook the soaked rice until it is 70% cooked. Drain the rice and set it aside.
8. Preheat the oven to 350°F (180°C).
9. In a baking dish, layer half of the partially cooked rice, followed by half of the meat and its broth. Repeat the layers.
10. Sprinkle the julienned carrots, raisins, and chopped almonds on top.
11. Cover the dish with aluminum foil and bake in the preheated oven for about 30 minutes, or until the rice is fully cooked and fluffy.
12. Remove from the oven and garnish with the reserved caramelized onions.
13. Serve hot and enjoy the flavorful Kabli Pulao with your friends!
