I had a easier time, I am building a str-dex poison/bleeding character, overwhelm him with poison and bleeding let the poison take over him, and just bait him for a few every now and then attacks to keep the poison

The difficulty chosen does not affect how much AP and EXP you earn, so you might as well go for easy difficulty. I've managed to get 16 seconds per run by using magnify materia with fire, and pretty much just spamming Fira, as well as giving Barret elemental materia linked with lightning to deal with the sentries which spawn far away.

Confirmed still working, beat it with Lothric Knight Greatsword +7 and a stamina plant like the video said. My Sorcerer only had 18 strength and still hit pretty hard despite not meeting the requirements of the weapon. I killed him and knocked him off the edge at the same time, the spell was awarded directly to my character.

I found a safer way. Just bait him outside and stand behind the grave stones near the edge of the cliff. He will just run straight off after a few attempts to get to you.
