Instant Masala Dosa Recipe (No Onion-Garlic) | Crispy Dosa with Tasty Filling 🌟
Craving a perfect Masala Dosa but don’t want to wait for fermentation? This quick & easy dosa recipe uses Eno to make the batter instantly ready! Plus, we’re making a flavorful no onion-garlic potato masala filling that’s just as delicious. Serve it hot with sambhar and coconut chutney for a complete South Indian meal! 🍽️

📌 Ingredients
🫓 For Dosa Batter:
✅ 2 cups Idli rice (or regular rice)
✅ 1 cup Urad dal (split black gram)
✅ 1 tbsp Methi dana (fenugreek seeds)
✅ ½ cup Water (to adjust batter consistency)
✅ ½ tsp Salt
✅ 2 pouches Eno fruit salt
🥔 For Masala Dosa Filling:
✅ 10-12 medium potatoes, boiled & peeled
✅ 1 tbsp Sabut jeera (cumin seeds)
✅ 1 tsp Rai seeds (mustard seeds)
✅ 1 tsp Sabut dhaniya (coriander seeds)
✅ 2 Sabut Kashmiri lal mirch (whole dried red chillies)
✅ 1 tsp Hing (asafoetida)
✅ Few curry leaves
✅ 1 tsp Haldi (turmeric powder)
✅ 1 tsp Dhaniya powder (coriander powder)
✅ 1 tomato, finely chopped
✅ ½ cup boiled green peas
✅ 2 tbsp chopped fresh coriander (hari dhaniya)
✅ Salt to taste
✅ 2 tbsp Mustard oil
🧀 For Garnish & Serving:
✅ Grated paneer (for extra richness)
✅ Sambhar & Coconut chutney

📌 Step-by-Step Guide
🔹 1. Soaking Rice & Lentils (0:59 - 2:42)
1️⃣ Wash 2 cups idli rice and 1 cup urad dal separately.
2️⃣ Soak rice and dal in water overnight.
3️⃣ Add 1 tbsp methi dana to urad dal while soaking.
🔹 2. Grinding the Batter (2:43 - 5:26)
1️⃣ Drain water from soaked rice & dal.
2️⃣ Grind urad dal finely in a mixer without extra water.
3️⃣ Grind rice separately, but keep it slightly coarse.
4️⃣ Mix both batters together in a bowl.
5️⃣ Add ½ cup water to adjust the consistency.
6️⃣ Add ½ tsp salt and 2 pouches of Eno for instant fermentation.
🔹 3. Making the Masala Filling (5:27 - 7:48)
1️⃣ Heat 2 tbsp mustard oil in a pan.
2️⃣ Add curry leaves, jeera, rai, dhaniya, Kashmiri lal mirch, and hing.
3️⃣ Add 1 tsp haldi powder and mashed boiled potatoes.
4️⃣ Mix well and cook for 2 minutes.
5️⃣ Add salt, dhaniya powder, chopped tomato, and boiled peas.
6️⃣ Cook for a few more minutes and add chopped fresh dhaniya.
7️⃣ Let the filling cool.
🔹 4. Making the Dosa (7:49 - 9:41)
1️⃣ Heat a tava on medium flame.
2️⃣ Wipe it with a wet cloth to control heat.
3️⃣ Pour a ladle of batter and spread in a circular motion.
4️⃣ Drizzle a little ghee or oil on top.
5️⃣ Place potato masala filling in the center.
6️⃣ Add some grated paneer for extra flavor.
7️⃣ Fold the dosa and cook until crispy.
🔹 5. Plating & Serving (9:42 - 10:19)
1️⃣ Serve hot with sambhar & coconut chutney.
