    This type of service provider remains super common all around Asia (especially in densely populated middle and middle to lower income countries) like Jakarta, KL, Manila, and in many regional (smaller) cities and villages on their outskirts. The number and subspecialization of them are remarkable. For example can see mobile sellers of acquarium fish with plastic bags dangling from their carts, even ones that roll/ride or walk around exclusively to fill butane lighters. Its a lost art and believe that many of these would STILL work as business models if there were people willing to set up their carts and do the work. The biggest question I have about this particular knife sharpener is HOW GOOD is the quality of his work and the end product. It looks like this stone is too coarse and not fully round so its hard for me to imagine him getting good (not less long and durable) edges. But anyway, it was well worth watching and thanks for posting.

      Well at that speed, he's not very likely to overheat the edge! Neither did I see him doing any honing(stropping). Of course, if he done a SUPERB job, they wouldn't need doing again for many months, so wouldn't really be in his interest, would it??

      @@NR3HGV If you cook daily, a normal kitchen knife (like the ones that are sharpened by these guys) needs re-sharpening more frequently, every few weeks at least. You get it back from him, it's sharp, for kitchen duty. Fine "honing" is for part-timers or people who like to admire their blades...

    Interesting book! I have just finished reading it. I will explore Rue de Martyrs in my next visit. As a shopping centre consultant, I like all those retailer’s stories in this book.

    Lived in Leblon, Rio de Janeiro, in the 90's . "My" knife sharpener appeared periodically on my street with his pushcart/knife sharpener service and could be seen all over the South Zone of Rio. He never called out to advertise his services: the high-pitched grind of knife to stone was enough to bring maids and "donas de casa" out of their apartments and into the street.

    Congratulations on your well earned honors! I discovered your book on the Rue du Martyrs after spending an epiphanous week visiting an old friend at his apartment in the 9th. I found myself drawn daily to walk up the hill and to get lost in the daily life of the real Paris. There must be more for you to write about this country you love so much, no?
