Check out this easy Mexican shrimp cocktail recipe using grilled shrimp and grilled lime. I used 2 pounds of shrimp for this recipe, but I needed probably a half, to one pound more. The ratios of ingredients are up to your preference in comparison to the amount of protein used, but I'll list the ingredients down below. Enjoy

    I appreciate your honesty about the end of your cook. I get so tired of seeing smoking videos where they act like the food they made is the best they ever tasted. lol. Everyone has a learning curve when they first start out. Nothing is perfect. You will get the hang of it.     I just did an entire pork belly (skin off) fat side up on my pit boss at 250-degrees. The day before I just salted both sides with maldon salt. I took it off at 160-degrees int temp. Sliced it and fried it and salted it again. MMMMM!👌

    You make a pasta and tomato dish without having wine on hand? Good ingredients but not the right method in cooking them. Proper cooking methods are the secret to fine cooking and dining. You passed this on to unsuspecting people who are trying to learn something. All this recipe really is is nothing more than American chop suey with sausage meat instead of hamburg. Way too much cheese too. The truth is not always something we like to hear. Good day

    I have found that if you smoke any meat and then lket it proof at 200 for hours it will be tender and delicious.

    Good job. Guac or no guac, who cares? Make it with your own choice of toppings. Roll too. Potato, ordinary burger roll or Brioche bun. I like the idea of the tortilla press to make the patties uniform thickness and to the thickness you like. I bought similar paper but chose parchment as opposed to waxed. Your choice. 1,000 5.5" sq. sheets should last me the rest of my days. I'm a 2 1/2 ounce 80/20 patty guy and serve doubles with a homemade Jamaican BBQ sauce instead of ketchup. You make your burger, I'll make mine. I'll try this on my Weber but will use my cast iron burger press to press my burgers before I invest in a tortilla press, just to see how much I enjoy them grilled as opposed to using a griddle or flat top. Thanks for posting.

    I tried this for my first time grilling tonight, and I guess my grill wasn't hot enough because the burgers started melting through the cracks lmao. How do I make sure it's hot enough? more coals? I did a pyramid formation on one side but maybe not enough?

      Sorry to hear that. I would make sure the meat is as cold as possible before you put it on the grill just to make it easier to remove the patty wax. I would still make sure the grill is nice and hot. Maybe don’t smash them super paper thin. Also, when flipping, make sure the spatula is going with the grates. And remember it cooks super super fast. Good luck.
