In South India fresh leaves are made into a curry with dal ,haldi salt and coconut jeera paste. A seasoning of shallots and red chillies complete it. It is very tasty. It is also added to dosas, Sauted first and egg salt added so that we have a bhurji of egg and freshmoringa leaves. Dry bhaji too can be made out of fresh leaves with shallot, red chilly seasoning.

Power Talk on "How to write a research paper and publish it in a good journal " by Dr.Smita Lele Research is a field that many of us do persue and must have done at phd or pg level or even at graduate level The insights of a sucessfully published research paper are revealed . 1)Firstly , instead of the regular practice of starting with an introduction start with an Objective and then directly skip to Conclusion 2)After having written analyze your content your wxperimental research data and look out for the following things :- 1)What is new? 2)What is Novel and Unique? 3)What is innovative? 4)What is new Science and Technology developed ? If satisfied to these then proceed if not then have a look at your experimental data and look for any additional experiments that need to be carried out this if done at initial stage before concluding the data becomes very helpful as once data table is made it is difficult to conduct other research exoeriments and again write the whole thing . So it is better to analyze at initial stage 3)Go ahead and write results and discussion and look for anything that may be held objectionable 4) Proceed with writing methods and then lastly Introduction A successful research article requires planning at the very initial stage and after planning write, submit and publish

India has so many cultures to celebrate, and each culture has their own rules and traditions in all aspects, today we are going read about need for certifying jain foods by khushbu Shah. Today due to changing lifestyle our eating habits also get changed from home made food to readymade food from hotels aur packaged food, larger no of people eat outside It creates concern for people who eat particular kind of food ,like 'jain food' * jainism is one of the Indian cultures which is based on non violence(ahinsa) principle ,practised and taught by lord 'Mahaveer' * jain people don not eat food which causes harm or creates violence to lives of other even they avoid tuberose fruit & veggies like onions, garlic, potato carrots etc causes they create violence to plant. But while traveling outside , some airlines, hotels,& processed food claims that it follows jain rules but they don't have authentication & certification for that , which creates problems for people to eat with trust and beliefs * so it's very important that certification is important that food is made with basic principles of jainism, with that moral values & rules with which we cooked at home ,atleast just keeping away prohibited things . * good thing is that some bodies like 1) jain food 2)satvik food 3) vegan food Gives assurance to jain food lovers . but it's need of hour that when we ordered or buy jain food it should be certified so that everyone can eat it with faith, belief, and satisfaction of being followed with our traditional culture &moral values Thank you😊

The video enlighten us about ripening process in fruits. Living commodity which respire even after harvesting. *More the respiration less will be the shelf life*.A fruit undergoes 4 main phases that is 1) birth 2) growth 3) maturation and at last 4) decay talking about two main types of fruits that is *climatic* and *non- climatic* fruits, non-climacteric fruits need an extra effort for ripening process. Ripened and unripened fruit can be distinguished by 1) *Fragrance*- which is due to the ester which is volatile in nature due to which we can smell it. 2) *Change in the colour* as the chlorophyll degradation caused by ethylene (ripening agent) which is for removing magnesium iron from the benzoic ring of chlorophyll due to which different colours are formed during ripening like carotenenoid, xanthophyll & Cryptophyll. 3) *Flavour development* 4) *Change the sugar content*- the complex sugar present in the unripe fruit gets converted into simple sugars like fructose and glucose which gives its sweetness. 5) *Cell wall*-pectin is present in the cell wall on which pectinase enzyme acts and produce pectic acid which makes the cell wall loose 6) *Degradation of acid* - In unripe fruits acidity is high and as it gets ripening and proper balance of sugar acid ratio. *Thank you sir, you are really very good in explaining the concept in the most simplified way*.

powertalk by manjiri chunekar on nutritional qualities of moringa olifera pharmaceutical companies are making so many nutritional supplements, capsules , to add nutrients in our body . Food industries are also started making fortified products to add or complete the nutritional deficiencies. But yet we have more options. We all eat fruits &vegetables considering as it will gives us only health Benefits but studies shows that nutritional content in fruits &veggies depleting rapidly as high as 75% over 50 yrs But we are ignoring some very nutritional veggies one of which is molinga olifera we used to calld it' drumstick tree 'which is trasure of nutrients we generally consume its pod in sambhar or in form of curry but which is actually least nutrient part of tree , The most nutritious part is leaves then flowers, it's leaves contain 30% protein 3% calcium, package of micro nutrients like phosphorus, manganese ,potassium, zinc, selenium, it contains 17 fatty acids, rich in vitamin-E, beta - carotene, B1 B6 B12 Western countries used it's capsules as health supplements but we Indians have better options than this using dried leaves powder of moringa in our daily food like curry ,salad, any type of dish as it doesn't ulter the taste of food. because it is tasteless ,odurless but yahh very nutritious, so add one more member in our masala box with haldi and hing to get nutritious & healthy food Get aware about the benefits of moringa and start fortifying our food .it wil also helps in rural development because it found everywhere, Thank you 😊

I totally agree with Panda sir that food technology should be a separate profession like doctor, engineer, lawyer, CA. And to actually see this change our education must be changed as syllabus and teaching and learning system for food technologist available is failed to produce quality students. Also changing the way of enforcing law to including all stakeholders to raise awareness efforts by food authority must reach to all food tech students. Food technology education must be business centered not be job oriented.

th-cam.com/video/xUMe2wd6frQ/w-d-xo.html Pleasant afternoon to everyone, For today's assignment I have watched the video of AFST power talk by Dr Prabodh sir discussing about "Futuristic regulatory trends" It is essentially required for the young entrepreneurs in order to succeed in their startup in food industry He has efficiently explained in very simplified and lucid language comprising of important 7 points : 1) *Clean level*- as people are getting more health conscious conscious minimum amount of additives must be used be used. 2) *Increase in cost for testing*- apart from nutritional panel, testing, testing of different contaminants like and insecticides pesticides and other aspects is also important and will be mandatory. 3) *Traceability and recall*- there's going to be a huge impact on traceability and recall in future regulatory trends 4) *Investing cost of good documentation*- this is required to make your product more addressable. 5) *investing time, money and knowledge for inhouse people to understand regulatory trends*- necessity of in-house peoples development about regulatory trend because depending on outsource will not be feasible 6) *Regulatory challenges with respect to natural one's*- due to these regulatory Trends many claims will come up so the one must be efficient enough to reciprocate them with the help of proper documentation and clinical study if there is any health claim. 7) *Investment of time in Regulation and advocacy*- which is essential for being successful to overcome regulatory Trends successfully successfully. I'm thankful to sir for making insightful video about the different aspects of Food Technology about which many of the food Technologist are not aware.

Apologies for the late response.. Well main point is to limit the intake of sweets to a minimal level.. Also prefer to sweeten your foods with natural 'foods' as much possible like dates kharik raisins etc. 2nd choice would be anything less processed palm sugar, jaggery, kakvi etc. But none of it it free food or without the calories. All of them will affect blood glucose in the end.
