RECIPE:
• 500 g of milk
• 100 g of caster sugar
• 50 g of strong flour
• 2 eggs
• Few drops of vanilla extract
• 15 g of custard powder

METHODS:
• Beat the eggs and sugar together in a bowl. Add the flour and custard powder and then beat the mixture together to form a liaison.
• Place the milk and vanilla extract in a saucepan and simmer until hot.
• Pour about one-third of the hot milk into the egg mixture and whisk in. Pour the remaining hot milk bit by bit and stir until thick. Stir occasionally to help the mixture cool quickly. Use a bain-marie to heat the mixture or heat on the hob.
• Place the mixture in a bowl and cover with a cling film.
• Allow to cool and then transfer into a piping bag.
