Their choice is not only Basmati Rice, but the longest, driest, n none-sticky Rice, which remain fluffy n looks good too. We make the best long basmati Rice in two ways. One, as you explained, the other, like spagetti. Boiling the Rice in more water, salt, n some oil, rinsing the water out, when cooked, n placing it back in the oil n a bit of hot water, closing the lid with some thick cotton wrapped the lid in, to absorb the steam, n let it continue cooking. The most important part of Rice for Persians is the * bottom of the pot* which will be brawn n crunchy. 2nd most important is making saffron n rose water with some of the ready to eat Rice n use it on top of the rice in serving dish. The heavenly smell n taste of the rose water n saffron topped Rice is very enjoyable. That's how much rice means in Persian cuisine, which is basically Mediterranean, except Rice instead of noodles. Thank you for this eye opening clip. PS: yes, we wash the rice two times, thoroughly, before cooking.
