    What the hell did I just watch? what was that substance she poured out of that tube? Why not use real whipped cream? And what was that red liquid he kept dunking the cookies in?

      Thank you for watching! The white substance is kohupiimakreem, a type of quark that's very popular in Estonia. It's a different dairy product than whipped cream - thicker and more suitable for küpsisetort, so there's no need to use whipped cream here. However, whipped cream or yogurt could work as substitutes in the US, where quark products aren't as common. The red liquid is a homemade juice concentrate, which adds moisture and flavor to the cookies.

    Looks delicious! I've never heard of that yogurt/cheese. I love discovering new products! How else do you use it? Do you just eat it like yogurt?

      Thank you! It's called kohupiimapasta or kohupiimakreem (quark cream). It's used in many desserts, like kamavaht and Swiss rolls, but it's also eaten with berries, granola, or kissel. They even sell it in small cups, which people usually enjoy on its own as a dessert.

    This looks delicious. I think that I ate this dish when I was in Bavaria. I am vegetarian so this meal was really appreciated.

    Those mushrooms are chanterelle mushrooms - or in German: Pfifferling. They're definitely not a Champignon, which is usually called a button mushroom in English. You're correct, Schwarzwälder Schinken is very different from the black forest ham sold in the US. Over here you go for bacon as a substitute which is kinda "meh" or you go to a store that has imported meats like Whole Foods, who will sell you "Speck" - yeah, another stupid word replacement, but Speck in the US is essentially Schwarzwälder Schinken. You could substitute Parma or Serrano Ham - both readily available in the US - but they both are dried and not smoked so you miss out on the smokey flavor.
