Rang Birangi Arbi ( Multi Coloured Colocasia )

Recipe Name: - Rang Birangi Arbi ( Multi Coloured Colocasia )
Serves: - 5
Cooking Time: - 30 Minutes
Three main ingredients: - Arbi, Salt, Green and Red Capsicums
Ingredients
500 gms arbi
½ tsp salt, level
2 tbsp oil, refined
½ tsp salt, level extra
¼ tsp red chilli powder
½ tsp turmeric powder
1 tsp cumin powder
2 tsp coriander powder
½ cup green capsicum, sliced
½ cup red capsicum, sliced
1 onion,50 gms, thinly sliced
Method:
Peel and cut Arbi into slices. Put in a plate and sprinkle salt all over. Mix and keep for 2 hours. Then wash it well changing water three to four times. Now spread it out on a cloth. Put another cloth over it and dry it and put it in a plate.
Heat oil in a kadhai to medium heat. Add Arbi and stir fry it for 5 minutes., stirring occasionally.
Then sim the heat. Add salt extra, red chilli powder, turmeric powder, cumin powder, and coriander powder, mix well.
Cover and cook till almost done,stirring occasionally. Then add green and red capsicums and onion and stir fry for 3 - 4 minutes. It should be crisp tender.
Take it off heat. Check seasoning.
Put it in a serving dish.
Serve hot.
