Re your backstay tension it should be enough to make luff tension of your jib that it doesn’t being to quiver in the gusts and no more. You can then progressively tighten your backstay as the wind increases until you begin to get a mainsail crease. Then you know that you’ve over tightened your backstay. I always use my kicker to get a suitable twist beginning with about 52-55mm for light air and measured from the 2nd batten to the backstay. You didn’t mention mast rake which is critical for above 5knotd of breeze it should be 1135mm measuring from the inside of your bow bumper up to the eyelet which holds your forstay. Apply more jib twist (& main also ) if it gets lighter than 5 knots and rake your mast back to about 1138-1139 mm.
Your jib tack down haul is far too high. Ideally There shouldn’t be a gap between the jib tack and the deck about 1mm gap is fine however your boat has a 4-5mm gap.
It's a bit basic and doesn't help with a strong willed non narrator who will insist on chirping in constantly. One of you guys please , otherwise it all descends into chaos.

I would also appreciate a recorded demonstration that illustrates how to tie a stop knot for bowsies; particular for old and tired less-than-nimble fingers. Dave K
