Managing Celiac Disease & Other Dietary Needs around the Holidays
We joined AARP Massachusetts last week to help them understand celiac disease and other gluten-related conditions. The only treatment for celiac disease is a strict adherence to the gluten-free diet. So, we shared on how to safely eat gluten free outside of the home and what you, as a caregiver, can do to safely prepare food for any setting and occasion. As the holidays are upon us, we want to ensure that our friends and family members with dietary restrictions can enjoy the festivities in a safe and delightful way!

Wait, if you have Celiac Disease, but are on a strict diet, wouldn't the blood test be normal if you aren't having any gluten?

I've heard that gluten can stay airborne for up to 3 days before it settles on surfaces. Could you confirm?

My daughter's and cousin's celiac was only diagnosed after endoscopy last year. Blood work was not a reliable test for either one of them. Maybe we need more work on this!
Are you saying that prior to the endoscopy the blood test was negative or inconclusive for Celiac for both of them?
Just realized my severe milk allergy for 20 years has been married to a gluten allergy for who knows how many years & I didn't know about it until now. No more toasted bread samiches.

What about a Senior Center that provides meals, but won't allow someone with Celiac to even have a piece of fruit or drink? Even if they offer to pay the donation for the full meal? They say they aren't allowed in.

Wow I am so thankful that you guys are on this. My whole family has either Celiac Disease or Gluten Intolerance. My mom had Gluten Intolerance and was in hospitals and nursing homes. It was a night mare. She was sick for about 10 years and thankfully we had someone working with us who could help but the last nursing home she was in and where she died during COVID was awful. Thankfully they closed about a year after she died. We have dealt with my parents both being in the hospital and hospitals not getting it or understanding where gluten hides. Thankfully with advocacy success can be made and I was thrilled when talking to a nurse and she said well I have to follow the doctor's orders and I said well what does the order say. Her mouth fell open when she read "Do whatever the daughter says in regards to nutrition and food." To me that was a win. My dad made it through his 59 day hospital stay and 6 surgeries during COVID and he now lives with us. Hopefully we never have to do a nursing home but I am keeping this video. Thanks for much!!
After my hospital stay in 2i always ask my husband , "wth do people do when they need to go to the hospital, or live in a care facility!" I was in for a month and the food made it impossible to continue healing. So this was soooo sooo interesting to me and made my day. I'm so happy people are on this ... and finding a way 🌸

Could very strong pre/probiotics help? There are testimonials n evidence. Problem is weak stomach flora ,gluten screw through tummy walls n gone intercellular...toxins. Projectile puking, heart burns,etc,,candida Albicans...bad news
In my opinion, the positive response to a strict GF diet (your symptoms disappear) is more important than the biopsy. Of course, it is not official, but isn't getting well as soon as possible the main objective.
Maybe, but you get a lot of grief and no one believes you were sick in the first place.
@ohana8535 I found that once you are officially diagnosed, everyone believes you, but then "nobody" cares, so really, what difference does it make. No one has "ever" asked to see my official diagnosis when I request GF for anything, I believe in the theory that 10% percent of life is what happens to you and 90% is how you react to it. This condition, which in most cases is effectively treated with a diet change, could hardly be compared to a serious life-threatening thing like cancer, etc. To me, it is at most "inconvenient" and nothing more. The more you keep reminding others of your perceived handicap the less sympathy you should expect. Just my observed opinion based on almost 20 years experience.

I've had a severe milk cheese & dairy allergy for over 20 years. Now, I feel like I'm dying. After all this time staying away from dairy products & now I know I need to stay away from f ing bread?!? It makes me angry as hell but I love nature & my loved ones so I have to eliminate breads & anything with gluten or wheat. Well wishes to you & yours❤

Genetic testing should be ruled out early on. I have had all of these!! Took 66 years to get a relative diagnosis. This is more than incompetence!

Why would you rule out Genetic testing? Everyone should be tested. If you don't have the gene, you can't have Celiac.

Your doctor "will decide" is NOT something you should rely on. It's the reason I remained undiagnosed for over 14 years. If I didn't take matters into my own hands, I would most likely be dead now. Please don't make it sound like the majority of drs know what they're doing re celiac disease!
It took them decades for me, even though I had bad symptoms. They just discounted me as a mental case.
Please remember everyone these tests are NOT reliable. So a negative test does NOT mean you or the family member don't have celiac disease. The SYMPTOMS are the true indicator. And a positive reaction to a 100% gluten-free diet are the confirmation.
yes but some of the damage has already been done before diagnosis and a gluten-free diet. So NOT ALL cancer-related issues are resolved as tissue has already been damaged.
There is still a cancer risk, but studies report that it is a similar risk compared to general population. Please note, this is on a population level and we strongly encourage each individual to work with their own medical team to best understand their personal risk and prevention.

You best switch to Whole Foods immediately as 70% now have Some level of celiac at just 30 Yrs. Stop wheat. Stop corn and all it’s Derivers also under new names to obfuscate Stop soy it’s screwing up hormones and 8 in ten men and women going to my doc have hormone and T level issues but that can be from our bodies by 30 being full of micro plastics which is true. Stop drinking from chit plastics stop eating foods with multiple ingredients I stopped all of in 2019 and my health is now perfect. If you are eating fast food you are getting fat and sick.

Yes, according to my doctor you can get sick. Whether it is "violently" or not depends on the person. But the damage and increased risk of cancer is still being done, even if the symptoms are milder.

Cheese wraps are good too. I just put a small amount in the microwave to soften it, and then put that between two pieces of parchment paper and roll it out with a rolling pin. I put them in the fridge because they can be too fragile warm. You can buy some, but they are very expensive, and they are pretty easy to make. I have used several different cheeses.
