    @5:18, the consensus is to not let the pot sputter out the brew during the last phase but for different reasons. The grounds found at the bottom of the boiler dropped from the filter basket. If you were to let most of that water run up the filter and through the chimney, you wouldn’t get the grounds in your brew, they’d be filtered just like the rest of your grounds. However, if you grind too finely, they will get through. James Hoffmann suggests not to let the Moka pot sputter because it produces bitter coffee. I don’t know whether that’s true; I haven’t noticed a difference but just in case, I remove the pot from the heat source, just like you did, before it gets the chance to sputter everywhere.

I`ve started to make coffe with moka pot very recently, and despite now I`m getting a good coffe, I wonder if it`s normal that there are always kind of 20 to 30% of water left in the water tank after the process; so to get this good coffe I use to put 80 to 90% more water than the measure (for overal losses) I want to drink or serve.

    • @photina78
      @photina78 10 หลายเดือนก่อน

      Unfortunately, he's no longer on TH-cam; but I can answer your question. Yes, you should always see leftover water in the bottom of your Moka when you open it to clean it. This leftover water is not the best-tasting extraction, it's diluted and full of fines so you don't want to send it through.

    • @photina78
      @photina78 10 หลายเดือนก่อน

      Part 2) Bialetti says they designed the Moka to be a measuring cup, so you'll always get the perfect ratio of coffee to water if you fill the water to touch the bottom of the valve, and fill the basket with coffee powder until it's level with the rim. Bialetti said don't add extra water or coffee. Especially don't let the water cover the valve because that can cause a dangerous explosion.

    I have the 2 cup New Brikka. It comes with a plastic measuring cup for the water. I use exactly the amount of water specified by Bialetti instructions: 120 ml. It makes a lot of crema! It's perfect! I cook it on a preheated medium electric stove. (If I used gas, I would try a low flame first; but if it didn't make enough crema, I'd go up to a medium-low flame.) Bialetti says to remove the Brikka from the stove as soon as you see steam and the crema stream is established. At 4-1/2 minutes my crema stream starts, a few seconds later I remove the Brikka from the stove, then it finishes brewing on my countertop from the residual heat inside the pot. It's perfect! We like the Bialetti Perfetto Moka Espresso and Lavazza Espressos the best, they're already ground medium-fine for the Moka pots.

    This is my 2nd Keurig coffee maker of this model. th-cam.com/users/postUgkxBrV-RbF5Nk0Rlt9i15aao-YMzqzTG8Vf The first worked fine for more than 2 years, and I could still get a decent cup of coffee out of it if I fiddled with it when I decided to replace it. The problem I had with my first unit was this: When attempting to brew a cup of coffee, the unit would either keep brewing until the coffee was undrinkable or it would not run long enough and the coffee produced was way too strong. I cleaned the unit as best I could but it did not help. So in the end it was just too much trouble to get a good cup of coffee out of it, so I decided to replace it with a new one, which has been working great since I unpacked it.

    Based on what my Italian friend taught me, this is correct in cleaning classic aluminum Italian moka pot (cafetiera). Just a thought on the practice of washing the pot without soap... Perhaps the instructions to wash only with water are meant for the designs of moka pots containing carafes that are made from less porous, highly polished materials- such as stainless steel, ceramic/porcelain, glass/vetro, etc. Just a wild guess ☺

    I have started using a paper filter (cut out of kitchen roll paper) and putting this on the bottom of the upper half of my moka pot. This gives a cleaner and smoother tasting brew and the left over water in the boiler is still clean afterwards. It is a good idea to turn the upper part of your moka upside down to place the filter and then lightly wet the paper filter to stop it falling out when you fit the upper part of the pot to the boiler part.

      While I am not one who uses a paper filter, I know plenty who do. The hot ticket is to use ready-made Aeropress paper filter disks. Cheap, fit perfectly, and available nearly everywhere. Dampen the bottom of the top chamber, stick it to the removable filter, and screw the top on. Dampening it makes it stick better. They can be washed and reused, by the way.

    Grazi! Excellent tutorial. I was searching for how to make a better crema. I didn't know that some.robusto and dark roast are key. What percentage robusto in the blend?

    Thanks for this! Others don't do cleaning videos. I got disgusted at 3:50 but for a good reason.

    I cannot get cream with my Brikka ;-(

      Follow the printed instructions to the letter. Make a few practice pots to season it and get the valve working well, but don't drink those. The New Brikka has a plastic measuring cup. Use 120ml cold or room temperature water in the 2 cup pot, or 170ml water in the 4 cup pot Coffee must be medium-fine grind. Choose Italian ground espressos that have a Moka pot icon on the package: illy, Lavazza, Kimbo, or Bialetti Perfetto Moka Classico Espresso work very well. Use a low gas flame or medium electric stove. Nothing will happen for the first 4 minutes or so, then the coffee will quietly seep in. Around 5 minutes you'll see crema. Before 6 minutes you'll see a lot of crema. Take it off the stove when you see steam and it's starting to get loud. Let it finish filling off the heat so it doesn't scorch. It will work!

      @@christophebaudeau9614 Let me know when you get crema. I forgot to say the fresher your coffee is the more crema it makes. 100% Arabica works well; but if your blend includes a percentage of Robusta beans, they make more crema and have more caffeine, too.

      @@photina78 I tried again yesterday, taking your advice into account, but it did not work. I tried with 100% robusta, it produces crema, but the coffe is bitter and undrinkable

      Try with only 20% Robusta because the flavor will be better. Robusta is bitter. But 100% Arabica works well for me too. I use illy Classico Espresso for Moka, also Lavazza Espresso Italiano, and my daughter gets great results with Bialetti Perfetto Moka Classico Espresso. Coffee must be fresh, because old coffee always tastes bitter if it's been 7 days since you opened the bag. I use room temperature bottled water and my daughter uses chilled filtered water from her refrigerator door. Both work great! The measuring cup is so you can fill the 2 cup pot with 120ml, and the 4 cup pot with 170ml. My daughter and I both preheat the electric stove to medium. Set the pot on, then remove it from the stove when it starts to steam and the crema is coming out, but before it accelerates and gets loud. Always wash the pot with hot water, but never use soap. Remove the rubber gasket and metal filter so you can wash those every time. Dry everything with a cloth. Study the Brikka and Moka videos on this channel. Another good tutorial is the "Annalisa J Moka pot" video. I didn't see your reply in my notifications, so I'm glad I happened to rewatch this video. Let me know how it's going.
