Beef and Cheese Snack Sticks | A Great Snack!
It had been a while since I have done some snack sticks. These turned out great. I used the dehydrator, so we got our smoke flavor in other ways. I used beef and pork, but you could use whatever protein you would like to use. You really gotta give these a try!

The Kamado Joe killed it again...this time on a whole Prime Picanha roast. I reverse seared it to a perfect medium rare. I would take this cut of beef cooked like this over any other. Holiday Ham | Double Smoked on the Kamado Joe

I love doing a nice ham at Christmas. Today we did a whole Frick's ham on the Kamado Joe using the Big Joe Lump Charcoal and some apple wood chips. We added a little mustard binder and some Meat Church Holy Voodoo to kick it up. It turned out great! You could do this same thing on any cooker just slowly bring it up to temperature, 130-140 F. I live in France and I have had a BJ2 for 3 years. Before I had Webers, but the BJ2 has changed my way of cooking... It's cooler than with the Weber, especially as soon as you know how to start it properly and adjust the temperature. I am still amazed at how well the temperature holds, especially for long cooking times ! And, when our friends see "the beast", they are surprised and amazed to eat very nice dishes ! In short, a very very good purchase !!!

We eat them for snacks and sometimes as a quick lunch here in Austria, they are called Cabanossi here. Really good stuff, especially after some hard work.

I've been sitting on a wagyu Picanha in my freezer for a bit now. Haven't had the right opportunity to cook it. It's too much for me, my wife, and our 3 year old just to have for dinner but not enough for more than 5-6 people lol. Thanks for this video because this is what I think I'm going to do whenever I get the chance.
Roll them in foil will not allow the fat to leak same as if they were in sausage casings

One thing…you used Cure #1 but didn’t let the beef stick cure…??? Cure #1 needs 12-24 hours to cure, before smoking.
Does the mayo add a nicer texture and flavour ?

I also bought this smoker, it's a big disappointment
I ended up getting rid of mine. It was running better after i had it serviced but yeah, it was unreliable. It could put out good food though.

@ I’m not familiar with the ironwood specifically but I have the timberline xl and it is a solid cooker.

@@nathanking218 great question…I always forget to say that. it was about 4 hours. longer than I expected. I think it was still a little frozen inside.

@@BuQeyeBBQ Thank you for the reply. That was my worry as well. I know the videos I have watched said to put in the oven at 160 to 170 for a certain amount of time. My dehydrator will go up to 165 so I might try a small one (1lb) just to test it out and see what happens.

@@mrj.r.3172 I received it right before Thanksgiving. My first cook was hanging ribs. They were the best ribs I've ever smoked. This cooker holds temp well and was very easy to light and stabilize. I love this smoker.

@@mrj.r.3172 You won't be disappointed. It's very well built and really mobile on the wheels. The vortex basket eliminates hot spots. I don't regret this purchase at all.

Yes, I found a few bags at Wal Mart and bought one to try out in my new Z Grilles 700. At first there was a temp flare, but the controller remedied that. The clean smoke was a welcome sight.. What i didn't like was all the 'dust" from the wood pellets when I emptied the hopper.

My grandpa made the best sauerkraut! Every fall he'd make a huge 50 gallon crock of it. His secret was freshly minced garlic when he bruised the cabbage.

When I was a campfire girl back in the 1960s (haha old!) we made this too. I earned some best flair for my sausage making with my mom watching. I was 9! It’s good. My mom was skeptical but she ate most of it! Thanks. I’d been looking for this recipe forever. I used the oven. Exactly same ingredients and process.

Only way it gets better is SMOKE ROTISSIER TURKEY YUM be sure to brine it for about at less 3 day

Tip: If you put a quarter on the vent hole with a golf ball sized stone on the quarter it increases the pressure cooker performance of the cooker and keeps your food more moist. It also decreases actual cook times by increasing the internal pressure.

Great video. You took the time to explain alot of the issues with the SmokeFire. I had the same issues. It speaks volumes that Weber discountinued the Smokefire and came out with something completely different. They abandoned most of the unique design notes from the Smokefire for a more conventional pellet grill and guess what, there are alot less issues. Actually I haven't heard of any from Searwood owners. Give them credit for trying something new, but it seems they did zero testing on the Smokefire and if they did, they ignored the results.

@@BuQeyeBBQ Same. For me, the main reason I bought the SmokeFire in the first place was for overnight cooks. The flare ups and the pellets getting stuck pretty much ruled that out.

What is the purpose of heating the brine?

@@richardcole9990 Heating to a boil would likely concentrate it more and make it more potent over time if you reduce it. I’m no expert though and maybe you are right. I just wanted to dissolve those solids. Maybe it would kill the acetic bacteria if you heated it too much…
