In this episode, I would like to share with you a very special ingredient ‘sea urchin’. Do you know such a delicious sea urchin turns out to be its gonad😂😂
No matter where it comes from, it has become a favourite of many people😍😍and I am just like that. The sweetness and deliciousness of it deeply attracted my taste, and it was unstoppable😋😋
If you eat sea urchins, it is best to eat fresh raw sea urchins. I was so lucky to be able to buy fresh sea urchins this time🍀🍀Opening fresh sea urchins is not that difficult as I thought👏👏Seeing such fresh sea urchins, I remembered my favourite dish sea urchin chawanmushi❤️❤️ The delicious sea urchin with soft steamed egg🥚🥚is really a satisfying dish👍👍

--------Sea urchin chawanmushi recipe -------
Ingredients for Egg Liquid:
(Makes about 8 servings)
-Eggs 240g
-Wadakan sauce 35ml
-Mirin 30ml
-Sake 10ml
-Chicken or dashi broth 500ml
Other Ingredients:
(for making one serve):
-Small piece of fish fillet
-One Scallop cut into slices
-Sea urchins 3-4 pieces
-Carrot few slices
-Egg liquid 100ml
~Method~
Mix all the eggs in a bowl
Add all the ingredients together and sift
Put the prepared seafood ingredients into the sea urchin shell
Then pour the egg liquid into the shell
Put carrot slices and sea urchin in
Cover with plastic wrap
Medium low heat steam for 10 minutes
Turn off the heat and continue to simmer for 10 minutes
Put the fresh sea urchin on top of the steamed eggs

Eggs : other liquid = 1 : 2.4

    Hai may i know, is it need 1000 ml for soak the beans or 2000 ml for soak the beans. Cause i see the recipe on the front page its write 2000 ml for soaking, but on the making video, the subtitle said soak the beans with 1000 ml water for 8 hours. So which one is the correct one, thank u for making this video ☺

      Thank you for correcting my mistake. The water used to soak the beans should be 2000 ml instead of 1000 ml. However, the measurement of soaking water does not need to be accurate, and it is more important to ensure the measurement of cooking water is correct. 😀

    You have a lot of patience to puncture the skin that way. After so many experiments, I found that blanching the skin with hot water was the only way to make that job easier.
