Welcome to our channel. Our main focus is Sourdough and Favourite Family Recipes. I am a beginner with a deep love of Sourdough that started in March 2020 and it is where my main focus will be.
Best advice I was given at the beginning of this journey to be patient and to give myself grace remembering that every result doesn’t need to look good to taste delicious.

Sourdough Cinnamon Rolls Small Batch
Good day everyone, today we are bringing you a trial run at our old converted recipe from regular cinnamon rolls to sourdough cinnamon rolls. We have reduced it down to be one tray for a smaller household as the original recipe made several trays. We would like to mention that on the section of this episode where I buttered the dough before adding the cinnamon sugar mixture the camera stopped so I missed that one section, our apologies for that. Everything else was successful as we hope to help anyone looking for that smaller recipe that is more approachable. We learned a few things including that our oven needs to be set to 375 next time. Rolls, Sourdough Cinnamon
Ingredients
170 grams Milk of Choice ¾ cup
20 grams Sugar, granulated 1 ½ tbsp.
30 grams Butter or Margarine 1/8 cup
5 grams Salt 1 teaspoon
1 Egg white 1
15 grams Yogurt, plain 1 tablespoon
95 grams Active Fed Starter ½ cup
340 grams Unbleached All-purpose Flour 2 ½ cups
Instructions:
Scald milk (warm milk to just starting to boil) and remove from heat. Add sugar, margarine, and salt to milk (let cool to lukewarm). Transfer mixture to small bowl so temperature will reduce faster. Stir until temperature drops below 95 degrees Fahrenheit. Once temperature drops pour a small amount into a small bowl with egg white and stir. This will allow egg white to be added without the egg white scrambling. Add in the active fed starter and stir to combine.
Next transfer wet ingredients into a large mixing bowl. Add the flour and stir in until mixture becomes too thick to stir then change to mixing by hand.
Knead for 5-7 minutes until dough is smooth and elastic then form into a ball. Place in a lightly oiled bowl and cover. Let rise for 1-3 hours or until doubled in size.
When dough has risen, transfer to a lightly floured work surface. Roll dough out into a square. Brush with melted margarine (or melted apple jelly if you prefer). Mix together ½ cup brown sugar and 1 Tbsp. of cinnamon. Sprinkle brown sugar and cinnamon mixture over buttered dough.
Slice into ½ inch slices with unflavored dental floss as demonstrated in episode and place on parchment lined baking sheets, if you do have parchment you may wish to use greased foil for easier cleanup. Bake in 325 to 375 (depending on hot your oven is); for 15-25 minutes or until golden brown. Remove from oven and transfer to cooling racks right away or buns will stick to the parchment or foil. Serve warm as is or topped with your favourite icing or glaze.

Love the rubber band to mark the level. I usually use a dry erase marker, and this seems less messy 😂. Was that 2 weeks on the counter not feeding or in the fridge?
Great question and thank you for asking. Yes, it was kept in the refrigerator. This was a smaller amount of starter saved than usual and I believe what caused the liquid to start faster. When we feed the starter for a recipe, I wait about 2-4 hours until starter really starts growing and I immediately move about 1/2 jar of starter to clean jar to save for next time and use the rest in the recipe. Since the starter is on the way up with growth and put into fridge right away it will hold the starter longer since it still has food. I hope that helps and yes, elastic is better for me.

"Can't make anything nice if you don't make a mess first" that's exactly right! I always just put a few blueberries on top of the pancake then cover it with a little more batter so the batter doesn't turn blue, but I'll eat blue pancakes too! 😂 Looks delicious! ❤
