    Ich suche genau dieses Messer in Deutschland und komischerweise in dieser Größe nämlich 13,5cm ist das Messer hier nicht/nicht mehr zu haben 😳😳😳

    I have owned one of these for six weeks now and i must comment on how pleased i am about the quality, finish and sharpness of the factory edge of this awesome blade. I spent weeks researching chinese cleavers in general and vegetable and meat cleavers in particular. My mission was to obtain the Shi Ba Zi Zuo cleaver but due to local shortages with local retailers, the closest i could get was the Xiao Tian Zi. The price was amazingly cheap, which worried me, but upon arrival, the quality, finish and sharpness was utterly far beyond my expectation. The profile of the blade is within my skill range as a sharpener, the edge retention is well beyond my requirements as a home chef and in terms of cost it is well within anyone's budget as it is very affordable, so much so as i question the manufacturer's profit margins in terms of practical costing at point of manufacture. A solid investment for anyone exploring the asian blade line today !!

    I've got one, and a couple of the nakiris. Branded differently but the same knife. Sure, edge retention isn't that great, but the cutting performance is. I've been amazed at the performance you can get from absurdly cheap knives if you know how to pick them.

    Looks like your angle is too steep for the edge of that knife.

      It is the best angle for me, because otherwise I would have to constantly re-sharpen it. The metal is very soft and a shallower angle would quickly bend the ridge.

      The first combo stone is @ #400 and #1000 grit. The second orange stone is @ #6000 grit

      #400 and #1000 Combo stone is by KAI SHUN. The #6000 grit is by Tiger/Sun.

    Throw a little painter’s tape on the blade before you clamp it so you don’t scratch it with the jig! Nice job though!

    buy better stone maybe? those amazon combination stones wear off fast and also if you're gonna go on a strop then why even bother stropping it on newspaper?

      Why I should buy a better stone? The knife shaves hair of my forearm. The Stones are from KAI Shun JIS 400/100(the green one) and the 6000 JIS is a Sun/Tiger. The newspaper stropping gives me the feeling that the edge is a little bit more sharper. 🙂

      I think it is a good knife. The sharpness is retained for a long time. It can be resharpened very well and lies comfortably in the hand.

      Moin, da die Laufrichtung der Lederscheibe zur Klinge wäre. das hätte zur Folge, dass die Klinge in das Leder schneiden würde.

      Moin und vielen Dank! Es sind Verschnörkelungen/ Stahllagen zu erkennen. Das liegt ein meiner geringen Auflösung. Die nächsten Videos werden in besserer Qualität eingestellt. Der Titel ist die Bezeichnung des Messers, sofern ich das rausbekomme. Auf der Seite von HGS Solingen kann man die damasttypische Zeichnung erkennen. Ich weiß gar nicht, ob der Begriff Damaststahl geschützt ist.
